This October, Ayala Coffee is honored to welcome Chef Julius Santos in celebration of Filipino American History Month for a very special edition of our Supper Club.

For one night only, we’ll be transforming our coffee shop into an intimate dining experience centered around Filipino food, storytelling, and community. Originally from San Francisco, Chef Julius brings a distinct bi-coastal perspective to the kitchen. His cooking is rooted in the flavors of his Filipino heritage, shaped by the ingredient-driven ethos of Northern California, and refined by some of New York’s most acclaimed kitchens, having trained at Michelin-starred restaurants Crown Shy (✽) and SAGA (✽ ✽) under the late Chef James Kent. During his time with Kent Hospitality Group, Chef Julius also had a brief stint in the Philippines at Toyo Eatery in Makati, a one-Michelin-star restaurant and also named Tatler Philippines’ Restaurant of the Year in 2024. Throughout his culinary journey, his mission has always been clear: to uplift Filipino cuisine with ambition and heart, while helping expand its place in today’s culinary landscape.
